Instant Pot Orange Chicken with Quinoa

 

 

I must admit, my Instant Pot gets a lot of use. Sometimes it seems like everyone is running in different directions, but with the Instant Pot, I can get dinner on the table in a hurry. This yummy Instant Pot Orange Chicken with Quinoa is always a hit with my family, and it only takes about 30 minutes – start to finish!

Instant Pot Orange Chicken with Quinoa
A delicious orange chicken is easy when you use an Instant Pot. While your Orange Chicken is cooking, put on a pot of quinoa and you'll have a delicious meal in under 30 minutes.
Servings
Ingredients
  • 2 lbs chicken, breast or thigh meat
  • 2 Tbsp vegetable oil
Orange Sauce:
  • 1 cup orange juice
  • 1/2 Tbsp grated ginger
  • 3 cloves garlic, minced
  • 1 Tbsp rice wine
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup lite soy sauce
  • 1/2-1 Tbsp Sriracha hot sauce
  • 1 orange, zested
Slurry:
  • 2 Tbsp cornstarch
  • 2 Tbsp orange juice
Optional Garnish:
  • green onions, sliced
  • orange zest
  • sesame seeds

Orange Sauce:

Slurry:
  • 2 Tbsp cornstarch
  • 2 Tbsp orange juice
Optional Garnish:

  • sesame seeds
Instructions
  1. Cut the chicken into 1-inch to 2-inch pieces. Dry thoroughly with paper towels.
  2. Set the Hot Pot to the "Sauté" mode and wait for the indicator to read HOT. Add the vegetable oil; let heat for a minute, then add the chicken. Saute the chicken pieces for 2 to 3 minutes; just until it starts taking on a light golden color. Stir frequently so the chicken doesn't stick to the pot.
  3. Add about 1/4 cup of the orange juice to deglaze the pan; scrape up any bits stuck to the bottom of the pot with a wooden spoon. Add the remaining 3/4 cup of orange juice as well as the rest of the sauce ingredients. Stir to combine, making sure all of the chicken is coated with the orange sauce.
  4. Close the lid of the Instant Pot. Select the "Manual" mode, and set for 5 minutes on High Pressure. Important: check to ensure that the vent is closed.
  5. Use a 10 minute Natural Release method to release pressure. Turn off the heat and release the remaining pressure by opening the vent. Carefully open the Instant Pot lid.
  6. In a small bowl combine the cornstarch and 2 Tbsp of orange juice. Whisk to make a smooth slurry. Turn the Instant Pot on to the Sauté mode, on LOW. Slowly add the slurry mixture to the pot of chicken, stirring gently to combine it with the sauce. Cook on Sauté mode for a few minutes, stirring gently. Cook until the sauce thickens. Simmer for 2 to 3 minutes.
  7. Let the Orange Chicken stand for 5 to 7 minutes; the sauce will thicken a bit more. Serve over quinoa and garnish with fresh green onion slices, some extra orange zest, and a sprinkle of sesame seeds.

Recipe Tips:

Add more or less Sriracha according to your heat preference.

 

Variation:

Serve over rice instead of quinoa.
