I love pound cake, whether it’s our always popular World’s Best Pound Cake served with a side of fresh berries or it’s this Irresistible Lemon Pound Cake with a scrumptious lemony glaze, it’s always a wonderful treat. Irresistible Lemon Pound Cake
This wonderfully dense, buttery, lemony pound cake is delicious. The pound cake has an excellent texture, not too cake-like and not too heavy, and the yummy icing just puts it over the top.

Ingredients
Cake:
  • 1-1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs, room temperature
  • 1 cup sugar
  • 2 Tbsp butter, softened
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 1/2 cup lemon juice
  • 1/2 cup vegetable oil
  • zest from one lemon
Lemon Glaze:
  • 1 cup confectioners' sugar
  • 2 Tbsp whole milk
  • 1/2 tsp lemon extract

Instructions
Make the Cake:
  1. Preheat oven to 350° degrees F. Grease and flour a 9 x 5-inch loaf pan; set aside.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a medium bowl, add the eggs, sugar, softened butter, vanilla extract, lemon extract, and lemon juice. Beat with an electric mixer until the ingredients are combined. Don't overmix!
  4. Pour the wet ingredients into the bowl with the dry ingredients and stir until smooth. Add the oil and lemon zest, stir to combine.
  5. Pour the batter into prepared prepared loaf pan. Bake in preheated oven 45 to 50 minutes, or until a toothpick inserted into the middle of the pound cake comes out clean. Remove from oven; cool on wire rack.
Make the Glaze:
  1. Whisk together the confectioners' sugar, whole milk, and lemon extract. Pour over the cooled pound cake.
