Roasting radishes mellows their bite and brings out their natural sweetness. This is a quick and easy side dish and a perfect choice even for busy weeknight dinners.
Wash and trim radishes. Cut large radishes into quarters. In a medium size bowl, combine olive oil, salt, and pepper; add radishes, toss to coat. Transfer seasoned radishes to the parchment lined sheet pan. Bake at 450° for 30 minutes or until tender.
Garnish roasted radishes with chopped parsley, if desired.
