Beef Barley Soup
This wonderful beef barley soup can be made right in your slow cooker. A perfect soup for those days when you don’t feel like cooking. Simply put everything in your slow cooker and let it do its magic. This soup has an incredible rich beef broth with plenty of yummy veggies and tender chunks of beef. This is one of my favorite soups. I add some crusty bread and the whole family gobbles it up. If you have any leftovers – you’re in luck, it’s even better the next day!

Ingredients
- 2 lb beef stew meat, cut into bite size pieces
- 1 cup pearled barley
- 1 bay leaf
- 3 carrots, peeled and chopped
- 2 stalks celery, chopped
- 1 onion, chopped
- 8 cups beef broth (2 quarts)
- 1 Tbsp Worcestershire sauce
- 1 Tbsp sugar
- 1 28 ounce diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- salt, to taste
- freshly ground black pepper, to taste

Instructions
- Add all of the ingredients, except the pearled barley, to a slow cooker. Cook on low heat for about 8 hours. Add the pearl barley, and continue cooking on low for an additional 2 hours.

Serve with some crusty bread for a perfect meal.
