Belgian Waffles
Light and tender on the inside and crispy golden on the outside. This Belgian waffle recipe is perfect to serve with fresh berries and whipped cream or pure maple syrup.
Ingredients:
1-3/4 cups flour
1 T baking powder
2 T malted milk powder, optional
2 eggs, separated
1 – 3/4 cups milk
1/2 cup vegetable oil

Directions:
- In a large bowl combine flour, baking powder and malted milk powder, if using.
- In a separate mixing bowl, beat egg whites until soft peaks form. Set aside.
- In another bowl, beat egg yolks; Add milk and oil and mix well.
- Stir the milk mixture into the flour mixture, stirring only until the ingredients are well mixed; batter will still be slightly lumpy.
- Fold the beaten egg whites gently into the batter being carful to not overmix or breakdown the egg whites.
- Pour about one-fourth of the batter on to a preheated Belgian waffle maker. Bake until golden brown and the steaming stops.
- Serve hot. Top with maple syrup or fruit toppings, such as apple topping, strawberry sauce or blueberry sauce. Add whipped cream if desired.
