Creamy Chocolate Pudding
A wonderfully smooth and silky chocolate pudding with an incredible deep rich chocolate flavor. Definitely a family friendly dessert! I love the rich flavor and creamy texture of this classic chocolate pudding. Of course, a little topping of whipped cream and some chocolate curls just puts it over the top! A definitely must for chocolate lovers.

- 2 cups whole milk
- 1/2 cup sugar
- 1/3 cup unsweetened cocoa powder
- 4 tsp cornstarch
- 3 large egg yolks
- 2 tsp pure vanilla extract
- 1/4 tsp salt
- whipped cream for serving, optional

Instructions
- Place 1-1/2 cups of whole milk in a heavy saucepan, stir in the sugar, unsweetened cocoa powder, and salt; combine thoroughly. Heat over medium-high until the mixture comes to a simmer. Remove from heat.
- Whisk the egg yolks in a small bowl. Add the remaining 1/2 cup of milk, cornstarch, and vanilla extract, whisk to combine completely.
- Very slowly drizzle some of the hot milk mixture into the egg mixture, whisking constantly to prevent the eggs from cooking. Return the tempered egg mixture to the sauce pan with the hot milk, whisking to combine. Bring mixture to a full boil, over medium-high heat, whisking constantly. Reduce heat and continue whisking until the mixture thickens, about two or three minutes. Remove from heat.
- Pour into six small serving dishes. Cover tightly with plastic wrap. Refrigerate for several hours or overnight. Serve with whipped cream, if desired.
