Frozen Bananas with Chocolate
Chocolate covered frozen bananas rolled in coconut, sprinkles or nuts are a delicious treat that’s perfect for the kids as well as the adults. If you’ve never had a frozen banana, you’ll probably be surprised to discover that they turn into a cold and creamy treat, much like ice cream. You can decorate these bananas with your favorite toppings, or just leave them plain for a low calorie frozen treat.
Ingredients
4 – 5 bananas
6 oz. chocolate chips (semi-sweet or milk chocolate)
1/4 c. milk
Toppings, such as: coconut, chopped walnuts or pecans, or candy sprinkles
Popsicle sticks* (optional)
* If you prefer not to use popsicle sticks, just cut the bananas in chunks and decorate each piece before placing the coated chunks on a sheet pan lined with parchment or waxed paper.
Directions:
In the top of a double boiler combine chocolate chips and milk. Heat over medium heat stirring frequently until chocolate melts. Set aside for a few minutes to cool.
Place coconut, nuts or candy sprinkles in separate bowls. Cover a platter with waxed paper. Cut each banana into 2 or 3 pieces, depending on size; insert popsicle sticks into the end of the banana pieces, if using.
Dip bananas into melted chocolate using the popsicle stick, bamboo skewer or fork; rolling to completely cover. Remove from chocolate and let excess drip off. Immediately roll in desired coating and place on prepared platter.
Once all of the bananas have been coated, place in the freezer for several hours or overnight.
Variations:
Use peanut butter chips or white chocolate chips. Be sure to try dipping some of your other favorite fruits in the chocolate. Strawberries, oranges and even apples are all delicious dipped in chocolate.
