A fool is an English fruit dessert made from pureed fruit, sugar, whipped cream and sometimes a flavoring such as vanilla or almond extract. Fool recipes are easy to make and are the perfect dessert for a special occasion because they look so beautiful.

Raspberry Fool Recipe
 

Ingredients for Raspberry Fool:

1 – 12 oz. pkg. frozen, unsweetened raspberries, thawed
1/3 c sugar
1 c heavy cream (whipping cream)
1/8 tsp almond extract, optional
raspberries for garnish
mint leaves for garnish, optional

 

Directions:

  1. Pour thawed raspberries into a fine sieve set over a large mixing bowl. With the back of a spoon press raspberries through sieve to remove seeds.
  2. In a separate mixing bowl add the heavy cream and beat on medium speed until cream begins to thicken. Add almond extract and continue beating until stiff peaks form.
  3. With a rubber spatula, gently fold the whipped cream into the fruit puree.
  4. Spoon into pretty dessert or parfait glasses. Garnish with fresh raspberries and mint leaves, if desired. Serve immediately.

Peach Fool Recipe

 

Ingredients for Peach Fool:

3 medium size ripe peaches (reserve a peach half to slice and use for garnish)
2 Tbsp sugar
1 c heavy cream (whipping cream)
1/8 tsp almond extract
peach slices for garnish
mint leaves for garnish, optional

 

Directions:

  1. Peel the peaches; cut in half and remove pit. Set one peach half aside to use as a garnish. Cut the remaining 2-1/2 peaches into chunks and place in a blender container with the sugar. Blend on medium speed until smooth.
  2. In a mixer bowl add heavy cream and almond extract. Beat on medium speed until stiff peaks form.
  3. With a rubber spatula, gently fold the peach puree into the whipped cream mixture.
  4. Serve in pretty dessert, parfait or drink glasses. Garnish with sliced peaches and mint leaves. Serve immediately.

Cherry Fool Recipe
 

Ingredients for Cherry Fool:

1 – 10 oz bag frozen pitted cherries, thawed
1 Tbsp sugar
1 c heavy cream (whipping cream)
1/8 tsp almond extract
fresh cherries for garnish
mint leaves for garnish, optional

 

Directions:

  1. Blend cherries and sugar on medium speed in blender until smooth.
  2. In a large mixing bowl, combine heavy cream and almond extract. On medium speed, beat until stiff peaks form.
  3. With a rubber spatula, fold cherry puree into the whipped cream and almond mixture.
  4. Serve the cherry fool in parfait or dessert glasses. Garnish with fresh cherries and a mint leaf, if desired. Serve immediately.

 

*Fruit fools can be held in the refrigerator for 3 – 4 hours before serving.
