Honey-Lemon Clay Pot Chicken
If you have never tried clay pot cooking, you are in for a surprise. A clay pot is perfect for baking chicken or making a one-dish meal. Simply soak the pot in water before filling; the clay pot seals in the moisture as your meal bakes inside. This clay pot chicken comes out moist and tender and the honey-lemon glaze adds a wonderful flavor. Definitely one of my favorite chicken recipes.

Ingredients
- 1 whole chicken
- 6 Tbsp freshly squeezed lemon juice, save the squeezed lemons
- Kosher salt, to taste
- freshly ground black pepper, to taste
- 1 Tbsp butter, melted

- 4 Tbsp butter, room temperature
- 4 Tbsp flour
- 2/3 cup honey
- 4 tsp soy sauce
- 4 Tbsp lemon juice reserved from above

Instructions
- Soak the clay pot in cold water for at least 15 minutes.
- Wash chicken inside and out, using cool water; pat dry with paper towels. Rub the chicken with 2 Tbsp of the fresh lemon juice (put the other 4 Tbsp aside for use in the glaze), then season the chicken with salt and pepper. Put the lemon rinds inside the cavity of the chicken and truss.
- Place the chicken into the prepared clay pot and brush with the melted butter. Cover the clay pot and place in a cold oven. Turn the oven on to 400° F and cook for 45 minutes.
- While chicken is cooking, make the glaze. Add 4 Tbsp butter and 4 Tbsp flour to a small bowl, mix until it becomes a paste. Combine honey, soy sauce and 4 Tbsp freshly squeezed lemon juice in a small pan. Heat the sauce over medium heat. When the sauce is hot, whisk in the butter/flour paste mixture. Cook over medium heat until the sauce is slightly thickened.
- After the chicken has cooked for 45 minutes, remove clay pot from the oven. Pour the thickened lemon/honey sauce over the chicken, covering all exposed areas. Replace the cover and put the clay pot back in the oven. Continue cooking for another 45 minutes or until chicken is tender and cooked through.
- Remove the chicken from the clay pot and place on a serving platter. The sauce can be placed in a gravy boat and served along with the chicken.
