Instant Pot Beef Stew
This beef stew has everything right. The beef is juicy and fall-apart tender, the broth has an incredible depth of flavor, and it’s super easy to make in an Instant Pot. I like to use the classic potato, carrot and onion combo, but this yummy Instant Pot Beef Stew is also delicious with green beans, celery or whatever your favorite vegetable might be. You can use russet potatoes, gold potatoes, red potatoes, or even canned potatoes if that’s what you have on hand. This recipe is easily adaptable, so make it the way your family prefers.

- 2 lbs beef stew meat, cubed
- Kosher salt, to taste
- freshly ground black pepper, to taste
- 4 Tbsp flour
- 4 Tbsp unsalted butter
- 4 cups beef broth
- 2 Tbsp Worcestershire sauce
- 2 Tbsp soy sauce
- 1 Tbsp brown sugar
- 2 cloves garlic, minced
- 1/4 cup tomato paste
- 2 tsp dried rosemary
- 2 tsp dried thyme
- 1 onion, chopped
- 5 potatoes, chopped into 1" cubes
- 3 carrots, chopped into 1" pieces
- 1 lb mushrooms, washed and quartered

- In a medium size bowl, add the stew meat and season lightly with the salt and pepper. Sprinkle the flour over the seasoned beef; stir to coat.
- In the Instant Pot, add the butter and set to the sauté function. Heat the butter just until it has completely melted and is beginning to sizzle. Add the stew meat and cook, stirring occasionally, until the meat is browned on all sides. Don't stir too often or the meat won't have a chance to sear and achieve that nice brown color. Flour from the meat might accumulate on the bottom of the pan, this is okay, just watch carefully so it doesn't start to burn.
- Add the beef broth to the pot and stir to deglaze the pot, gently stirring up the browned bits from the bottom and allowing them to dissolve. Once all the flour and bits have been incorporated, stir in the Worcestershire sauce, soy sauce, brown sugar, minced garlic, tomato paste, dried rosemary, and thyme.
- Add the chopped onion, potatoes, carrots, and mushrooms to the pot; stir.
- Close the Instant Pot lid and the steam valve. Press the "meat/stew" button, or set your electric cooker to high pressure for 35 minutes. After 35 minutes let the cooker to cool naturally, then release the pressure.
- After the pressure has been released, open the steam valve; very carefully open the Instant Pot lid. Stir the stew and taste for seasoning; make any necessary adjustments. Serve hot.
