Pavlova with Cream and Mixed Berries
Pavlova with cream makes an elegant dessert, but its simplicity also makes it perfect for just about any occasion, even a simple family dinner. The meringues are light and crispy with just a hint of chewiness in the middle. They have a perfect balance of sweetness that goes great with some berries. I like to make individual Pavlovas, but you can also make one large Pavlova for a beautiful and impressive presentation. A traditional dessert, Pavlova with cream is delicious topped with a variety of mixed berries. Of course, there are also many variations. For example, sometimes I like to use a homemade lemon curd to top some of the Pavlovas, then I add a layer of whipped cream and some mixed berries. Delicious!

- In large mixer bowl, beat egg whites until they are stiff. Add the sugar, 1 tablespoon at a time; beat well after each addition. Continue beating until the egg whites are thick and glossy. With a rubber spatula, fold in the vanilla, lemon juice and cornstarch.
- Spoon meringue mixture inside the circles; use the spoon to build up the edges a bit. The meringues should have a small indentation in the center. Alternatively, the beaten egg whites can be placed in an icing bag fitted with a large star tip. Pipe the meringues starting in the center and working towards the outside edge, building up the edge to create a bowl shape.
- Bake for 1 hour. Remove from oven and gently place on wire rack to cool completely.
- In a mixer bowl, beat the cream until stiff peaks form.
- Gently place the meringue on a serving dish. Fill the center with whipped cream and top with berries.
How to Make a Beautiful and Delicious Pavlova
Pavlovas are easy to make and require only a few simple ingredients that you probably already have on hand.
Beat egg whites until stiff. Gradually add sugar, beating after each addition. Egg whites should be thick and glossy.
Fold in vanilla, lemon juice, and cornstarch.
Use a spoon to make the meringue shells. Sides should be slightly higher than the middle. You could also pipe the meringues, but we were keeping it simple here.
Bake the Pavlovas at 300˚ F for about 1 hour. Cool on a wire rack.
Spoon whipped cream into the Pavlova and top with berries!
