It’s a beautiful day and I’m hoping to make it a very productive. I’ve got a long list of recipes I’ve been working on and many of these I’m hoping to get posted in the next couple of weeks.
Four of my kids are off to Washington DC for the week, so it’s just me and my oldest son at home. It’s hard to believe, but I don’t think we’ve been alone together since we were blessed with my second son; well, at least not alone for more than a few hours at a time.
Anyway, I’m sure my son is going to make himself scarce, since he knows my goal is to take care of some website upgrades and making sure my pictures are ready to post. I sure wish I was a better photographer, but that’s going to have to wait for another day.
With just the two of us here it seems kind of silly to make a big meal and who wants to deal with the cleanup, anyway! Lucky for me, one of our favorite quick lunches is a yummy grilled peanut butter and jelly sandwich. We used to make these quite a bit, but it’s been a while, so I thought I’d make them for our lunch today. They were so scrumptious!

I love the way the peanut butter gets all melty and yummy! A little dusting of powdered sugar and a handful of kettle chips is all it takes to make the perfect lunch.
