Roasted New Potatoes
Serves 4
These potatoes are quick and easy to put together and can roast in the oven while you prepare other elements of the meal.
Ingredients:
1-1/2 pounds new potatoes, washed and quartered
2 T olive oil
3 cloves garlic, finely minced
1 tsp dried thyme
1/2 tsp salt (preferably Kosher)
1/8 tsp freshly ground black pepper
Directions:
Prepare the new potatoes by washing and quartering. Place in a large bowl and add the olive oil, minced garlic, thyme, salt and pepper; toss well to coat evenly. Pour onto a sheet pan and bake at 450° F for approximately 30 – 35 minutes or until the potatoes are tender and begin to brown.
