Roasted Radishes? Oh, Yes!

Roasted radishes, you say? Stick with me on this, you’re going to be intrigued and if you try them, I think you’ll be thanking me! They really are that good!

With the arrival of summer I always find myself with an abundance of radishes. I love them raw with just a pinch of salt or sliced thinly and added to a salad. They are the first thing thing out of my garden each growing season. And, as a gardener, I like to share the bounty with friends and family. BUT — the radishes keep coming!

This juicy, crunchy, and slightly peppery vegetable is a nice treat, but there are only so many sliced radishes I can add to my salads. One day I was looking for some creative ways to use radishes when I came across an article that talked about roasting them. I have to admit, I was a bit skeptical about whether roasted radishes would be something I’d like. I’ve never even contemplated anything other than eating raw radishes. By the way, my favorite are the French Breakfast Radishes — I love them!

Any way, my curiosity got the best of me and I decided to give it a try. Some recipes call for lemon juice or some other type of acidity, but I find I get the best results with a little olive oil and simple seasonings. As with most vegetables, oven roasted radishes take on a wonderfully sweet flavor and slightly crispy exterior. They make an incredible side dish with meat, fish, or meatless entrees.

In this recipe, I’m sticking with nothing more than salt and pepper for seasoning, but don’t be afraid to experiment with your favorite flavors. A little thyme, oregano or garlic would definitely be delicious. I like to add a sprinkle of finely chopped parsley, right before serving, to give the roasted radishes a nice fresh flavor.

Growing Radishes

Whether you live in an apartment, the suburbs or on a rural homestead, growing radishes is EASY! This is a vegetable that anyone can grow, even kids. In fact, one of the reasons radishes are one of the most popular garden vegetable is because they’re so easy to grow. They have practically no pests to thwart your gardening efforts, they can easily be grown in pots, and they are fast growing, giving you quick results. There are very few things as satisfying as harvesting your own fresh produce. Radishes are also an excellent choice for succession planting, giving you plenty of radishes throughout the growing season.

Oven Roasted Radishes

Roasting radishes mellows their bite and brings out their natural sweetness. This is a quick and easy side dish and a perfect choice even for busy weeknight dinners.
Prep Time: 5 minutes
Cook Time: 30 minutes

Ingredients

  • 2 bunches radishes
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tsp parsley, chopped, optional

Directions

  • Preheat oven to 450° F.
  • Line sheet pan with parchment paper.
  • Wash and trim radishes. Cut large radishes into quarters. In a medium size bowl, combine olive oil, salt, and pepper; add radishes, toss to coat. Transfer seasoned radishes to the parchment lined sheet pan. Bake at 450° for 30 minutes or until tender.
  • Garnish roasted radishes with chopped parsley, if desired.
