Rudy’s Chunky Guacamole
This is a guacamole recipe that is almost like a salad with big chunks of tomato and avocado. Take care when combining the ingredients, what I love most about this guacamole is that it has those delicious chunks that aren’t all mushed up. Thank you Rudy for this delicious contribution. I made it for lunch today and it was superb!

Ingredients
- 2 ripe avocados
- 2 small ripe tomatoes
- 1/4 red onion, finely diced
- 2 - 3 Tbsp Pace Picante Chunky Salsa (mild, medium or hot)
- 1 - 2 Tbsp mayonnaise or Miracle Whip
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp chili powder
- 1/2 - 1 tsp cayenne pepper (depending on how hot you like it)
- ground black pepper, optional

Instructions
- Chop the tomatoes into bite sized chunks, removing seeds and keeping only the pulp. Chop the avocados into bite sized chunks. Add to a bowl along with the finely chopped red onion.
- In a small bowl add the picante sauce, mayonnaise, and spices; stir to combine. Add the sauce mixture to the avocado and tomatoes; gently stir to combine, being careful to not break up the avocados too much. This guacamole should stay rather chunky.
- Taste for seasonings and adjust if necessary. Place the guacamole in a serving bowl; let sit in the refrigerator for several hours to let the flavors mingle.
Recipe Notes
If you prefer, you can use your own favorite salsa, but the Pace brand is made with fresh natural ingredients and I think it's one of the best store-bought salsa's available.
I made this recipe TWICE and It. Is. Fantastic!!!!
The first time, I put the ingredients in the blender and the lack of chunkiness was disappointing, so I just coarsely chopped it the next time and it was much better.
