Irish Soda Bread
This rustic bread is perfect for a quick snack. Serve it with a slice of cheese, some sliced meat, or my favorite – toasted with a bit of orange marmalade slathered on it. Of course, Irish Soda Bread is just what you need to soak up the gravy in a hearty stew. There’s a good reason why this simple bread became an Irish staple, it’s delicious, satisfying, and easy to make.

Ingredients
- 3 cups all-purpose flour
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/2 cup butter, softened
- 1 cup buttermilk
- 1 egg
- 1/2 cup raisins, optional

Instructions
Preheat oven to 350° F.
- Lightly grease a baking sheet or line it with parchment paper.
- In a large bowl, combine both the all-purpose and wheat flours, the sugar, baking soda, baking powder, salt, and butter. Add 1 cup of buttermilk and the egg; stir to combine. Turn the dough out onto a lightly floured board and knead a few times. Form the dough into a round loaf by slightly tucking sides under; place on prepared baking sheet.
- In a small bowl, combine the buttermilk and melted butter; brush mixture over the shaped bread dough. (Save the remaining mixture to brush on loaf after it has partially baked). Using a sharp serrated knife cut an X into the top of the dough.
- Bake the bread about 30 minutes, then remove from oven and brush the remaining buttermilk/butter mixture over the loaf. Return the bread to the oven.
- Continue baking for another 15 - 20 minutes, or until the bread has a hollow sound when tapped on the bottom. You can also test for doneness by inserting a toothpick, when it comes out clean, the bread is done.
