Strawberry Lemonade Ice Cream
Who doesn’t love a wonderful homemade ice cream? This wonderful blend of lemony strawberry ice cream is just the thing to put you in a great mood. It’s rich and creamy, just like a homemade ice cream should be. With a lemon citrus base swirled with a scrumptious strawberry filling, this will probably become your new all time favorite ice cream! I know it’s a hit in my house – I have to hide it in the freezer.

- In a medium saucepan, combine the lemon zest, sugar, milk, 1/4 cup of the heavy whipping cream, and a pinch of salt. Warm the mixture until it barely comes to a simmer. Remove from heat, cover, and let the lemon zest infuse the mixture for one hour.
- Rewarm the milk and cream mixture. In the meantime, pour the remaining 3/4 cup of heaving whipping cream into a medium bowl.
- In a small bowl, whisk the egg yolks. Slowly add some of the warm milk mixture to the egg yolks, whisking constantly. Return the egg and milk mixture to the saucepan. Bring mixture to a boil, whisking frequently until it thickens. Remove from heat and immediately whisk into the remaining 3/4 cup heavy whipping cream that was reserved in the medium bowl.
- Chill the mixture several hours or overnight.
- Follow the instructions for your ice cream maker and freeze.
- In a medium saucepan, combine 1 cup of the sliced strawberries, sugar, and lemon juice. Heat to simmer and continue cooking until the strawberries break down and the sauce has thickened.
- Remove from heat and stir in the remaining sliced strawberries.Chill.
- Spread half of the ice cream into the bottom of a chilled container. Spread the strawberry sauce over the ice cream. Top with the remaining ice cream. Place container in freezer and freeze for several hours until firm.
How to Make Strawberry Lemonade Ice Cream
Gather a few simple ingredients.
Warm milk, cream, sugar, lemon zest, and a pinch of salt. Let steep for one hour.
(This helps develop the wonderful lemony flavor of the ice cream base. Don’t skimp on this step.)
Rewarm the cream mixture and slowly whisk into the egg yolks. Return to pan; bring to a boil and continue cooking until the mixture thickens.
Pour the thickened egg mixture into the reserved 3/4 cup heavy whipping cream and combine thoroughly.
Before freezing in ice cream maker, chill the base mixture.
Simmer sugar, lemon juice, and half of the strawberries in a saucepan until the mixture thickens. Stir in the remaining strawberries and chill.
Follow the directions for your ice cream maker to freeze the lemon infused base mixture.
In a chilled freezer safe dish, spread a layer of the ice cream in the bottom. Top with the strawberry sauce. Cover strawberry sauce with more ice cream and place in the freezer for several hours or until frozen.
Scoop Strawberry Lemonade Ice Cream into serving dish. The layers will give a swirled effect. Yummy!
