Zest from 2 lemons
1/3 cup sugar
1/2 cup whole milk or half-and-half
1 cup heavy whipping cream
pinch of salt
2 egg yolks
Strawberry Sauce
2 cups sliced strawberries
3 Tbsp sugar
1 Tbsp freshly squeezed lemon juice

    To Make the Ice Cream:
  1. In a medium saucepan, combine the lemon zest, sugar, milk, 1/4 cup of the heavy whipping cream, and a pinch of salt. Warm the mixture until it barely comes to a simmer. Remove from heat, cover, and let the lemon zest infuse the mixture for one hour.
  2. Rewarm the milk and cream mixture. In the meantime, pour the remaining 3/4 cup of heaving whipping cream into a medium bowl.
  3. In a small bowl, whisk the egg yolks. Slowly add some of the warm milk mixture to the egg yolks, whisking constantly. Return the egg and milk mixture to the saucepan. 8. Remove from heat and stir in the remaining sliced strawberries.Chill.
  9. To Assemble:
  10. Spread half of the ice cream into the bottom of a chilled container. Spread the strawberry sauce over the ice cream. Top with the remaining ice cream. Place container in freezer and freeze for several hours until firm.
