In a small bowl, mix together the sugar, cinnamon, and salt; set aside.
With an electric mixer fitted with the whisk attachment, beat egg white and water together until foamy and very soft peaks form.
Add the pecans and gently toss making sure all of the nuts are coated with the egg white mixture. Add the cinnamon-sugar mixture to the coated pecans and carefully stir to evenly coat the nuts.
Spread coated pecans in a single layer on a baking sheet, lined with parchment paper. Bake pecans in the preheated oven for 1 hour, stirring every 15 minutes.
Cool completely and store in an airtight container.
