It’s going to be a great weekend. I have a number of recipes (most making use of seasonal fresh berries), that I’ve been meaning to whip up, and this weekend, they’re finally going to get pushed to the top of my to-do list. One thing I’ve been thinking about for a long time is a Pavlova. The crispy sweet meringue topped with fresh whipped cream and berries will be the perfect treat this time of year. I was actually going to make it last weekend, but it’s been raining quite a bit. A word of warning – never make meringue when the humidity is high, it will be sticky and won’t dry out properly.
Berries Aren’t Just Delicious, They’re Also a Superfood!
We love berries and the farmer’s stand by our house is filled with raspberries, blackberries, blueberries and strawberries. The best part of these luscious berries is that they aren’t just delicious, they’re also a superfood! Lucky for us, it’s time to indulge in one (or more) of our favorite treats! Everyone enjoys a slice of fluffy Angel Food Cake topped with berries and cream, but we’re going to turn this classic into a fun, take-anywhere dessert. We’ll be building fruit parfaits in small Mason jars. They’re pretty to look at and the kids love the presentation.
As an extra special touch for the Pavlova and parfaits, I thought I’d make a scrumptious Lemon Curd. If you’ve been buying your lemon curd at the grocery store, you’ve got to try this recipe. It’s super easy and so much better than anything you’ll every buy at the market. It’s a smooth, creamy lemon curd with just the right combination of tart and sweet. Oh my, I can’t wait!
Other treats I’m going to try to get posted this weekend include The Best Lemon Blueberry Bread, Blueberry Scones and maybe a recipe for Biscotti, if I get the time. It’s going to be a busy weekend, but we’re looking forward to some delicious treats.
