White Chocolate Peppermint Truffles

- 25 Golden Oreo cookies
- 8 peppermint candy canes, divided
- 4 ounces cream cheese
- 1 pound good quality white chocolate

Instructions
- Finely crush 6 of the peppermint candy canes and set aside for garnish. You can either use a food processor or place the candy canes in a ziptop bag and crush with a rolling pin. Set aside to use as a garnish.
- Place the cookies and 2 remaining candy canes in the bowl of a food processor. Pulse until the mixture has the consistency of fine crumbs. Add the cream cheese and process just until the mixture comes together and forms a ball.
- Line a baking sheet with foil or plastic wrap. Roll the Oreo mixture into 1" to 1-1/2" balls; place on the prepared baking sheet. Freeze for 2 hours or until the truffles are firm.
- Place the white chocolate in the top of a double boiler. Melt the chocolate over gently simmering water; make sure the water doesn't touch the bottom of the top pan of your double boiler. Simmer over low heat, stirring constantly, just until the white chocolate is melted and smooth.
- Dip the Oreo balls in the melted white chocolate; immediately sprinkle with a little of the crushed candy canes. Place the truffle back on the baking sheet. Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in the refrigerator.
