Preheat oven to 400° F.
- When you're ready to make the meatballs, place the remaining 1/2 cup of Italian bread crumbs in a small bowl. Arrange mini muffin pans on a sheet pan to make moving them in and out of the oven easier.
- Roll meat mixture into approximately 40 meatballs, about 1-1/2 inches in diameter. Gently roll the meatballs in the bread crumbs and place in mini muffin tins.
- Bake for about 20 minutes until meatballs are cooked through and have turned a nice golden brown.
