Instructions
  1. In a large bowl, combine the ground pork, bulk sausage, ground round, chopped spinach, Parmesan cheese, eggs, spices, and 1/2 cup of the Italian bread crumbs. Thoroughly combine all ingredients, using your hands to ensure it's well mixed.
  2. Chill overnight or for several hours to let the flavors blend.
Preheat oven to 400° F.
  1. When you're ready to make the meatballs, place the remaining 1/2 cup of Italian bread crumbs in a small bowl. Arrange mini muffin pans on a sheet pan to make moving them in and out of the oven easier.
  2. Roll meat mixture into approximately 40 meatballs, about 1-1/2 inches in diameter. Gently roll the meatballs in the bread crumbs and place in mini muffin tins.
  3. Bake for about 20 minutes until meatballs are cooked through and have turned a nice golden brown.
