Baked Meatballs

Perfectly seasoned and easy to make, these meatballs cook up quickly in the oven. Serve as meatball sliders, with pasta or with your favorite side dish. Everyone loves homemade meatballs and this will become one of your favorite go-to meatball recipes. Make extras, they freeze beautifully!

Ingredients:

1/2 lb ground pork
1/2 lb ground bulk sausage
1/2 lb ground round
5 oz frozen spinach, thawed, drained and chopped
1/2 c finely grated Parmesan cheese
1 egg
1 T Worcestershire sauce
1-1/2 tsp dried basil
1 tsp garlic powder
1 tsp onion powder
1 tsp kosher salt
1/4 tsp cayenne pepper
1/2 c fine Italian bread crumbs, divided

Directions:

  1. Preheat oven to 400° F.
  2. In a large bowl, combine the ground pork, bulk sausage, ground round, chopped spinach, Parmesan, egg, spices and 1/4 cup of the Italian bread crumbs. Thoroughly combine all ingredients together using your hands.
  3. Chill overnight or for several hours to let flavors blend.
  4. When you are ready to make the meatballs, place the remaining 1/4 cup of Italian bread crumbs in a small bowl. Arrange mini muffin pans on a sheet pan to make moving them in and out of the oven easier.
  5. Roll meat mixture into approximately 20 meatballs, about 1-1/2 inches in diameter. Gently roll the meatballs in the bread crumbs and place in mini muffin tins.
  6. Bake for about 20 minutes until meatballs are cooked through and have turned a nice golden brown.
