Chocolate Peppermint Marshmallow Treats

- 24 small candy canes
- 12 marshmallows
- 1 cup semi-sweet chocolate chips

Instructions
- Place 12 of the candy canes in the bowl of a food processor and pulse to chop. You can also place the candy canes in a ziptop bag and crush them using a rolling pin. The crushed pieces shouldn't be pulverized, but they also shouldn't be too big. The photo gives a good idea of a size that works great for these treats.
- Line a baking sheet with foil or parchment paper. Insert a candy cane into each of the 12 marshmallows; place on the lined baking sheet. Place in the freezer for approximately 15 minutes.
While the marshmallows are in the freezer:
- Place the chocolate chips in a medium microwave-proof bowl. Melt the chocolate by microwaving for 45 seconds; stir. If the chocolate isn't completely melted and smooth, heat for another 15 seconds, stir until smooth.
- Dip each marshmallow into the melted chocolate, dip the marshmallow only half way up. Immediately sprinkle with crushed peppermint and place back on prepared tray. Refrigerate until chocolate is set.
