Chocolate Pudding
A luscious, smooth and silky chocolate pudding recipe that has a deep rich chocolate taste everyone will love.
Ingredients:
2 c whole milk
1/2 c sugar
1/3 c cocoa powder
4 tsp cornstarch
3 large egg yolks
2 tsp pure vanilla extract
1/4 tsp salt
whipped cream for serving, optional
Directions:
- Place 1-1/2 cups of whole milk in a heavy saucepan, stir in the sugar, cocoa powder and salt; combine thoroughly.
- Heat over medium-high until mixture comes to a simmer. Remove from heat.
- In the meantime, whisk the egg yolks in a small bowl. Whisk in the remaining 1/2 cup of milk, cornstarch and vanilla.
- Very slowly drizzle some of the hot milk mixture into the egg mixture, whisking constantly to prevent the eggs from cooking.
- Return the tempered egg mixture to the sauce pan with the hot milk. Bring to a full boil, whisking constantly, over medium-high heat. Reduce heat and whisk until mixture thickens, about two or three more minutes. Remove from heat.
- Pour into six small serving dishes. Cover tightly with plastic wrap. Refrigerate for several hours or overnight.
- Serve with whipped cream.
This chocolate pudding recipe is rich and creamy, it is denser than a chocolate mousse and so yummy!
Serve it chilled with whipped cream and a light dusting of cocoa powder, or layer it in a dessert glass, alternating the chocolate pudding with vanilla pudding, then top with a couple of raspberries and whipped cream for an elegant dessert presentation.
