Truss a Chicken Like a Professional Chef


 

Knowing how to property truss a chicken or turkey is an important culinary skill to master, especially if you want to learn how to roast a chicken in the oven or over a grill. Many cooks do not understand this simple procedure, but in a matter of minutes you can accomplish several things. First of all, if you put anything in the bird’s cavity, such as aromatics, you need a way to keep everything in place. Secondly, by making a neat parcel out of the chicken or turkey, you can ensure that the entire bird cooks evenly; it also comes out looking a lot better than a bird that is spread out in the roaster. A properly trussed chicken cooks better and looks great!

The only thing I have to add is that you should get a piece of clean kitchen string (not your hardware store twine!) and cut a length of about 18″. If you have trouble finding the kitchen string at your market, ask your butcher for a piece, they are usually more than willing to give you enough for one or two uses.
