If you like Biscotti, forget about paying the high prices charged in the bakery or coffee house. This delicious Almond Biscotti recipe is easy to make and offers plenty of options for customization.
Try it with anise, pistachios, hunks of chocolate or dipped in white or semisweet chocolate. However you make it, it’s incredibly delicious!
Biscotti makes a great gift idea or the perfect lunchbox treat. My kids love to have a piece when they get home from school. Italians enjoy biscotti dipped in a hot cup of coffee or a glass of wine.

- In a medium bowl, thoroughly beat the oil, eggs, sugar, vanilla and almond flavoring together.
- Combine flour and baking powder. Stir flour mixture into oil/egg mixture; dough will be thick. Stir in the slivered almonds. Divide dough into 2 equal pieces. On prepared baking sheets, form dough into long rectangles about 1/2 inch thick.
- Bake in preheated oven for 25 to 30 minutes, just until light golden brown. Remove the rectangles to a wire rack and cool slightly. When Biscotti rectangle has cooled enough to be easily handled, slice into pieces 1/2" thick, cutting crosswise. Place the slices, cut side facing up, back on the baking sheet. Bake for another 6 to 10 minutes; flip and bake for 6 to 10 minutes, again. Slices should be toasted lightly. Watch carefully, ovens vary.
- Remove Biscotti to a wire rack to cool. When completely cooled, drizzle with melted chocolate, if desired.
How to Make Almond Biscotti
Beat oil, eggs, sugar, vanilla and almond flavoring together until thoroughly combined.
Mix flour and baking powder in bowl. Stir into oil and egg mixture. Stir in sliced almonds.
Divide dough into two pieces. Form long rectangles on baking sheets. Press down to 1/2 inch thickness. Bake at 375 degree F, in preheated oven, for 25 to 30 minutes; until light golden brown.
Cool Biscotti bars on wire rack until they can be handled comfortably. Slice, crosswise, into slices that are 1/2 inch thick. Place sliced cookies on baking sheet, cut side down. Bake for 6 to 10 minutes, flip and bake on the other side for another 6 to 10 minutes. Biscotti should be toasted lightly.
Remove toasted biscotti to wire rack. Cool completely. Drizzle with melted chocolate, if desired.
