Peppermint Meltaway Cookies

Icing:
  • 1-1/2 cups powdered sugar
  • 2 Tbsp unsalted butter, softened
  • 1 - 2 Tbsp milk
  • 1/4 tsp peppermint extract
  • 2 - 3 drops red food coloring, if desired
  • peppermint candy canes, crushed

  • 1 - 2 Tbsp milk

Peppermint Meltaways
Instructions
Cookies
  1. In a large bowl, combine the butter, powdered sugar and peppermint extract. Beat at medium speed until creamy, scraping the sides of the bowl often. Add the flour and cornstarch to the butter mixture; beat at low speed until well combined. Cover; refrigerate the dough for 30 - 60 minutes or until firm.
Heat oven to 350°F.
  1. Shape rounded teaspoonfuls of the dough into 1-inch balls. Place balls 2 inches apart on ungreased cookie sheets. Bake in preheated oven for 12-15 minutes; just until edges are lightly browned. Cool 5-10 minutes on cookie sheets; carefully transfer to cooling rack. Cool completely.
Icing
  1. In a small bowl, combine the powdered sugar, softened butter, and peppermint extract with enough milk to bring the icing to the desired consistency. Stir in red food color, if desired.
  2. Drizzle the icing over cooled cookies. Immediately sprinkle with the crushed candy canes.
