Baked Tilapia
Baked tilapia is extremely quick and easy to prepare and like with most fish, simple seasonings are usually the best.
Ingredients:
fresh tilapia fillets
olive oil
kosher salt (or Salish smoked sea salt)
freshly ground black pepper
pinch of dried thyme, rosemary or tarragon
Directions:
Baked tilapia is so easy that you really don’t need to worry about precise ingredients or directions. Simply place the tilapia fillets in a baking dish, brush lightly with a good quality olive oil and season lightly. I typically use a light sprinkling of adobo with a little kosher salt and freshly ground black pepper and just a pinch of thyme or rosemary. You can easily leave out the adobo or herbs and the tilapia will still be delicious. Vary the seasonings or choose your favorite blends, just be sure to not overpower the fish. Simple is always best when preparing fish.
Place baking dish in a preheated 400° F oven and bake tilapia until it flakes easily; about 12 to 15 minutes, depending on the thickness of the fillets.
When I arrange my fillets in the baking dish, I always try to keep them about the same thickness. If I have some fillets that are a bit thin on one side, I layer that side on the thin side of another fillet. This layering gives the fish the same thickness so that it will all cook evenly.
Serve the tilapia with a simple side of couscous and some roasted beets for a fast, delicious and nutritious meal in under thirty minutes.
