Carne Asada Ready for Tacos

 

 

Carne Asada

Carne Asada literally translates to “grilled meat.” It is typically made with less tender cuts of meat, then marinated and grilled and served with fresh homemade tortillas. This carne asada recipe uses a marinade of lime juice and spices to tenderize the meat and leave it with a great flavor, perfect for grilling.


 

Ingredients:

1 flank steak or skirt steak


 

Carne Asada Marinade

1 lime, juiced
1/4 c olive oil
1/4 c cilantro, minced
2 Serrano chilies, minced
2 T minced garlic
1 tsp sugar
1/2 tsp ground coriander
1/2 tsp oregano, preferably the Mexican oregano
1/4 tsp ground cumin
2 tsp kosher salt
fresh ground pepper, to taste


 

Serve with:
fresh flour tortillas
chopped tomato
diced red onion
chopped cilantro
corn salsa
pico de gallo
guacamole
sliced avocado


 

Directions:

  1. Combine all the ingredients for the carne asada marinade. Place the steak in a gallon sized zip lock bag, pour in the marinade mixture and seal bag. Place the bag on a plate (just in case it leaks!) and refrigerate overnight, allowing the meat to marinate and tenderize.
  2. About 30 minutes before you are going to grill the meat, remove it from the refrigerator and allow it to come to room temperature. Scrape off excess marinade.

Prepare Grill:

  1. Grill the meat until nicely browned on both sides. The meat will cook quickly, so be careful that you do not overcook it. If you are using the Breville Smart Grill, both sides of the meat will cook at the same time, which greatly reduces cooking time.
  2. Transfer meat to a cutting board and let rest for 10 minutes. This will allow the juices to redistribute and will keep your steak  juicier and more flavorful.
  3. Use a sharp knife to cut the steak into thin slices. Be sure to cut across the grain, this will result in meat that is more tender. Pour the juices left on your cutting board over the sliced meat. Serve with fresh tortillas and any of the suggested toppings listed above.
