Delectable Classic Blondies

These blondies are absolutely delicious. I have a daughter who doesn’t like chocolate, so this is her special treat. When I make them for her, I usually leave out the white chocolate morsels, but the rest of the family loves them either with white chocolate or semi-sweet chocolate. These bars are moist and chewy, perfect for an after school treat or to take to a potluck.

Instructions
Preheat oven to 350° F.
  1. Line an 8-inch square baking pan with aluminum foil; leave a 1-inch overhang on all sides. This will make it easier to lift the blondies out of the baking pan. You'll be able to cut them into neat bars, perfect for serving.
  2. Combine the flour, baking powder, and salt together in a small bowl; set aside.
  3. In a medium saucepan, melt the butter over low heat. Remove the sauce pan from the heat. With a wooden spoon, immediately stir in the light brown sugar until it is completely dissolved. Quickly whisk the egg into the butter mixture. Stir in the vanilla extract. Add the the flour mixture to the butter mixture and stir, just until it is completely incorporated. Stir in the white chocolate morsels.
  4. Pour the blondie batter into the prepared baking pan. Bake in the preheated oven about 25-30 minutes, or until they are just set in the center. Remove from oven and cool on a wire rack. When they are completely cool, grasp the overhanging foil and gently lift to remove the blondies from the pan. Cut into 12 squares. Store in an airtight container at room temperature.
Recipe Notes

Variations:

Stir in milk or semi-sweet chocolate chips instead of white chocolate.

Chopped pecans or walnuts would also be delicious in these scrumptious blondies.
