These delectable little bites are a bit spicy, salty, and savory. They have a wonderful crunch that makes them ideal for snacking. Of course, they’re also delicious in a salad or add a few to your bowl of soup. I love them warm out of the oven, but they also make an excellent high-protein snack to take with you for lunch or after a workout. If you have kids, these tasty little bites are an excellent snack to enjoy on their way to after school activities.

Instructions
  1. Drain and rinse the chickpeas. Spread on paper towels and dry thoroughly. Leave on tray, uncovered, for about 45 minutes to air dry.
Preheat oven to 400° F.
  1. In a medium bowl add the chickpeas and toss with the olive oil. Make sure the beans are evenly coated. Spread the chickpeas in a single layer on a baking sheet that has been lined with parchment paper.
  2. Roast the chickpeas in the preheated oven for about 30 to 40 minutes, shaking the pan every 10 minutes to help them roast evenly. The chickpeas are done when they begin to take on a bit of color and are nice and crispy.
  3. While the chickpeas are roasting, combine the ground cumin, chili powder, cayenne pepper, and sea salt in a small bowl. Set aside.
  4. When the chickpeas are perfectly roasted, remove them from the oven. Immediately transfer to a large bowl and add the spice mixture. Toss gently to coat thoroughly. Pour chickpeas back onto sheet pan and allow to cool completely. Enjoy!
Recipe Notes

Chickpeas, also known as garbanzo beans, are an excellent source of protein, fiber, healthy fats, and carbohydrates as well as a long list of essential vitamins and minerals.

These Spicy Roasted Chickpeas are wonderful just the way they are, but you can easily adapt the recipe to your preference. Cut back on the spices if you prefer a snack with less of a kick (or up the spices if you want them a little spicier). Experiment with your favorite herbs and spices to make your own special flavor blend.
