Rudy’s Chickpea and Tuna Salad

I’ve tried many recipes for tuna salad, but when a friend recently sent me this recipe, I knew it was something special. I had never thought of adding chickpeas, but what a great addition to this delicious salad. Not only are chickpeas low on the glycemic index, they are also high in protein, fiber and iron. Fast, nutritious and kid-friendly, always a winner in my house!

 

Ingredients:

1 – 5 oz. can tuna, drained
1/2 can chickpeas (garbanzos), drained and rinsed
2 eggs, hard boiled
2 Tbsp pickle relish
1 clove garlic, finely minced
1 small shallot or 2 Tbsp onion, finely minced
2 – 3 Tbsp mayonnaise (more or less, to taste)

 

Optional Ingredients:
substitute garlic or onion powder for minced garlic and onion
chopped green onion
2 tbsp. finely chopped celery
2 tbsp. finely chopped red sweet pepper
1 tbsp. finely chopped pimento
dash of powdered cumin
dash of powdered cayenne

 

Directions:

  1. Drain tuna and break up into a bowl. Using a fork, partially mash the chickpeas, leaving them a bit chunky and add to tuna. Coarsely chop hard boiled eggs and add to bowl. Stir in the remaining ingredients, including any optional ingredients you choose to use. Lightly pat down and cover bowl with plastic wrap. Refrigerate several hours or overnight to chill and combine flavors.
  2. When I tested this recipe, I used celery, fresh garlic, shallot, cumin and cayenne. I like mine with a little punch, so I used about 1/4 tsp cayenne, but you can adjust the heat to your liking.

 

* Serve on a bed of lettuce or use as a filling for sandwiches.

 

** To stretch this recipe even more, try adding 1-1/2 cups of cooked pasta, such as elbow macaroni.

Mix Ingredients Together
Chickpea and Tuna Salad

Keep the chickpeas and eggs a little chunky. Coarsely mash chickpeas and roughly chopped hard boiled eggs. The onion, garlic, celery and other ingredients are finely chopped. If you like, you can top the salad with a little ground black pepper or onion powder before chilling.
