  • 6 medium potatoes, peeled and cubed
  • 3 Tbsp vegetable or canola oil
  • 3 Tbsp butter
  • 1/2 tsp paprika, or to taste
  • Kosher salt, to taste
  • freshly grated black pepper, to taste
  • 1-2 Rosemary Sprigs

Instructions
  1. Cube the potatoes and rinse under cold water; drain in colander and pat dry with paper towels.
  2. Heat the oil and butter in large, heavy skillet (preferably cast iron), over medium heat. When the pan and oil are hot, add the cubed potatoes and toss to coat with the oil and butter. Season with paprika, salt, and pepper.
  3. While the potatoes are cooking, remove the leaves from the sprigs of rosemary and finely chop; set aside.
  4. Cover the pan and cook for about 10 minutes, until potatoes are fork tender. Remove cover, and continue cooking for another 10 minutes or until crispy and lightly browned. Add the chopped rosemary during the last 5 minutes of cooking. Turn the potatoes frequently in order to evenly brown them on all sides.
