Fried Hominy Grits

 A traditional Native American breakfast cake.

Ingredients:  

One recipe of hominy grits, cooked according to the recipe above.

1/4 c bacon drippings or oil 

    

Directions:

Let grits cool, then roll into a log and wrap in plastic wrap or waxed paper. Chill several hours or overnight. Slice into rounds about 1/2″ thick. Fry in hot oil or bacon grease approximately 8 minutes on each side. Serve hot with salt and pepper, or with maple syrup. Delicious served with a side of bacon and some fresh sliced fruit.
